food (food) | larb gai

We probably order Thai food at least every other week for dinner.  My husband usually goes for a noodle dish like Pad Thai or Pad Se Ew, but I usually go for something a little lighter.  I love Thai curries and Chicken Satay, but one of my all time favorites to order is Larb Gai salad.  Although it's so easy for us to place an order at one of our favorite restaurants, cooking it is quite easy and my version is just as delicious.

Here's what you'll need:
  • 2 lbs of ground chicken breast (you can also use ground turkey or lamb)
  • 1 tbsp of peanut or vegetable oil
  • Half of red onion thinly sliced
  • 1 tbsp of chopped cilantro
  • 1 tbsp of sliced fresh mint
  • 1 tbsp sugar
  • 1 tbsp of un-cooked white rice
  • 3 limes
  • 2 tbsp fish sauce (can be found in the Asian food aisle)
  • 2 tbsp of garlic chili sauce (can also be found in the Asian food aisle) 
  • Lettuce cups or field mixed greens 
  • 1 cup of cooked brown rice (optional)

Directions:
  • Place sliced onions in a large glass bowl with juice from all 3 limes and let sit for 20 minutes (this helps cut the spice of the onions)
  • While onions are soaking in lime juice, toast rice in a dry pan until rice is golden brown
  • Once the rice is an even color, place in food processor and grind until it turns into a dust like texture
  • In a large pan, heat oil and brown meat 
  • Place fully cooked meat into the bowl with the lime soaked onion
  • Add cilantro, fresh mint, sugar, toasted rice, garlic chili paste and fish sauce to bowl
  • Mix until all ingredients are evenly distributed
  • Suggested serving:
    • Place meat into lettuce cups like lettuce wraps
    • Serve over a bed of mixed greens and a scoop of cooked jasmine rice

This dish is so light, refreshing and not to mention super healthy.  It's the perfect meal to feed any Thai food cravings.  Enjoy!
